4 Tablespoons Olive Oil (Virgin or otherwise)
1 Pound of ripe(ish) Tomatoes
2 Garlic Cloves, chopped
Salt and Pepper to taste
Few fresh Basil leaves, torn
Grated Cheese (I use Cheddar)
Optional (2 Fresh Chillies, Chopped), Some like it HOT...
Place everything in a heat proof dish (apart from the Cheese), mix with your hands so that everything gets coated with everything else.
Place in an Oven and roast for a good while. You can wait until the tomato skin begins to burn on top, that will give it an extra smokey flavor...And when that happens, then all is ready.
Cook and drain your favorite Pasta, put in a bowl and add some of the cooked tomatoes & sauce, some Cheese, and mix... And believe me, you don't need much for a full on flavor..

ps. You can remove the Chopped Garlic & Chillies before serving...
